Eating

About 6 months ago I became a very uninspired cook.  I guess I was in a funk, tired of cooking,  tired of cleaning, eating, the same old stuff over and over.  Maybe it was the winter blues, or something that will repeat itself once again down the road, but I had just lost my passion for cooking.

Let me say that I LOVE food.  And I can cook good food.  Nevertheless, my passion as stated had just faded.  I guess I was thinking of it as too much of a job... same thing, at least 3 times a day.  Prep, cook, clean, repeat...  I had forgotten that cooking can be an art form, fresh colors, beautiful food.  And most importantly, I was feeding my family.  It is a task that sometimes we forget the importance of.  Our babies are growing everyday, and it is my job to provide them everything their little bodies need, fresh food, full of all the things they need to grow big and strong.  I'm not sure what got me out of my funk.  It may have been finding some really good looking recipes, it may have been eating some AMAZING food at a couple of really great restaurants, it may have been that we ate some 'fast food'  too much and all I could think of was the emptiness inside of what we are eating but either way, my love for food and cooking had returned.

We had spent all day doing yard work, a lot of yard work.  I was so thankful for this dinner because #1 It is a crock pot recipe, so I had started the pork roast that morning #2  All other things that go along with it can be made that morning too #3  The slaw and the lime that is in this makes it actually delicious after a hot summer day of hard work.  Usually, after being out in the sun I am not very hungry, nor do I want anything hot but this was sooooo yummy.  We ate this and fruit salad and called it a night.  It would also go well with some black beans, if you want more dishes to clean.  Another yummy thing we ate this week was Pioneer Woman's Roasted Red Pepper Pasta.
  I love roasted red peppers so this sounded great to me.  It was also fairly easy and quick to make.  The only thing that could be labeled time consuming is that you have to use your food processor.  I hate using my food processor, the only reason being pure laziness.  So many parts to clean it seems, but really there's not I'm just a little ridiculous at times.  And you could probably cook and process them in the morning too and just keep the sauce base in the fridge till dinner.  Notice a theme going here?  Everything is better to do in the morning.  Why?  Easy...  Coffee.  Getting back to the meal, it was really good.  I was nervous that the kids would not like the sauce but they both loved it.  My husband loved it even more and was really excited about there being left overs.  And if you make this, spring for the fresh Parmesan instead of dried in a green container.  It takes it to the next level and get the right kind of noodle, regular spaghetti noodles just won't do!

So woohoo me, out of my funk, and am inspired once again.  I saw this sticker on a car awhile back and fell in love with it.
  I agree with this statement so much.
